I love to cook, but i find that it is so easy to fall into a rut of uninspired boredom. There once was a time that I could pick up any random cookbook and spend an entire day creating culinary masterpieces. That time however ended with the arrival of Sophia.
Now I have precious little time to get a meal on the table, and the majority of that time happens to be in the morning, which is when my princess has her best naps. Ive found that meal planning really helps me to stay sane, its comforting to not have top stress out about what im making for dinner, and it really helps to cut down the amount of time we spend at the grocery store. It just takes a little time every Sunday night to plan what were having for the week.
The biggest problem Ive been having is finding recipes that will allow me to do the majority of the prep work in the morning for a meal to be served 10+ hours later. Make Ahead Meals For Busy Moms has been a great resource for this. Its full of yummy looking recipes that can be prepared a few hours or even a few days ahead of time and served to your family with a few quick steps right before dinner.
The recipes are separated into categories; appetizers, breakfast and brunch, dessert, main dishes, side dishes, and soups, and even has a chapter full of helpful tips on pre-preparing your meals that I have found to be an awesome resource. The recipes that Ive tried have turned out pretty yummy, my husband and his friends LOVED the buffalo chicken dip i made for them last weekend, and i ate way to many macadamia nut cookies .
My favorite thing about this book though, is that it has a variety of different types of recipes, so even if this was the only cookbook you work from, it would be hard to fall into a rut.
