Being a new mommy can really limit your time. I find that my princess is a little more independent in the mornings but by the time afternoon comes around, shes usually in the mood for a little (a Lot) more attention. For this reason, i have recently come to love my slow cooker, I can get dinner going in the morning and in the afternoon i usually donmt have much more to do than slice some bread and set the table. It's definitely a better solution than the prepackaged food or delivery that I had been relying on for the first few weeks.
I recently tried out this recipe for roast chicken in the slow cooker and it turned out great! I had been planning on using the leftover chicken for a stew the next day, but there was none.
Ingredients
- 1 whole chicken 4-5 lbs
Rub Ingredients:
- 1/4 cup paprika
- 1 tablespoon packed brown sugar
- 1 tablespoon white sugar
- 2 teaspoons salt
- 1 teaspoon celery salt
- 1 teaspoon ground black pepper
- 1 teaspoon cayenne pepper, or to taste
- 1 teaspoon dry mustard
- 1 teaspoon garlic powder
- 1 teaspoon onion powder
Materials
aluminum foil rolled into 7 or8- 1 inch ballsDirections
Roll aluminum foil into balls and add to bottom of your crockpot.
Rinse and pat dry whole chicken, then rub dry ingredients all over the chicken, be sure to rub some inside the cavity as well.
Set chicken on top of foil balls and set slow cooker to high and cook for 8 hours or until chicken reaches 165 F
Just stumbled across your blog while looking for an easy chicken dish. Life with kiddos doesn't leave much time for fancy things, but this looks great. Can't wait to throw it in the crock pot tomorrow.
