Broccoli Risotto

Side dishes are the bane of my existence. Most meals I serve come with a salad, not because I love salad ( nobody loves salad) but because of its simplicity.  Sometimes though, i want to get a little fancy, and when i do, risotto is my go-to side. Mushrooms. lemon, saffron, beans, you can put anything in it and it turns out great.  My favourite though is broccoli risotto, even my three year old loves it.

1/4 c. olive oil, 
2 garlic cloves chopped
I large broccoli ("trees only, no stalks") chopped 
2 1/3 cup chicken broth, 
2 cup milk
1 cups Arborio rice
2 tbsp. butter
1/4 c. grated Parmesan cheese

Combine milk and all but 1/3 chicken broth in a small saucepan, heat on medium low
In a frying pan, heat 2 tablespoons oil. cook the garlic and broccoli until garlic is soft, about 3 minutes. Add remaining chicken broth,  and salt and pepper to taste. Simmer, uncovered, just until broccoli is tender, about 10 minutes. Set aside.
Heat the remaining oil in a deep frying pan. Cook onion until tender, about 4 minutes. Add the rice and stir thoroughly. Stir 2/3 cup mikl/broth combo into rice mixture. Cook, stirring constantly, until all of the liquid is absorbed. Add remaining hot broth, 1/3 cup at a time, stirring constantly. Allow the liquid to absorb between additions.
Cook, uncovered, until rice is creamy and grains are tender, then combine broccolli and risotto mixture. Top with parmesan cheese

Total cooking time is about 25-30 minutes.

Me VS. The Pin - Handprint Snowflake Edition


I love hand prints and foot prints.  I put them on everything from plates, to pictures, to wall art, and I even have a set tattooed on my wrist. Any time I come across anything to do with prints, I pin them, and I've been waiting all year to recreate this one.  It was super simple and turned out great even with a wriggly eighteen month old.

It was ridiculously simple as well, I filled clear plastic ornaments ( I got mine at Michaels) about a third of the way with white glitter "snow". Then painted each girls hand and stamped the print onto an ornament. Once it dried I painted no the faces. Super simple and adorable.

One Month from Today....

....I take possession of my house!

I didnt know it was possible to be this excited about a house, but I guess that's what happens when you move into your parents basement with a husband and two kidlets in tow.  Things are really starting to take shape now, its looking more and more like a home every time we go see it. We now have tiles,bathtubs,  trim and stair railings!
I have also been shopping up a storm for all the little things we need, and i just cant wait to get it and us into our new home.

Christmas!!!!!!!!


Yup, that right I said Christmas. Its only 53 days away you know.
This year I have a lot to be excited about come December.  



I can hardy believe it, but my (big) little princess is going to be three this year.  Its so clichéd to say, but it honestly feels like its only been weeks since she joined us, but here she is sitting beside me telling Dora that she should check her map.  







Our house will be ready!  It seems like we've been waiting an eternity already, and even though I know theres been a lot of progress on our little house, it still seems like another eternity until shes all ours. ( but living with your parents in the interim between houses can do that to you)






And last but not least, Christmas! I love Christmas, its my favourite time of year.  I cant wait to celebrate our first holidays in our new home.  I cant wait for snow. I cant wait to see the girls meet santa again. Hopefully the tradition we've started of hysterics in our santa photos wont be continued.....
