Chicken Tortellini Soup
Winter always makes me crave soup, its the ultimate cold weather food. Chicken noodle, potato and leak, baked potato, it doesn't matter I love them all. Sometimes though, I don't have all day to simmer a broth, on days like that I pull out this recipe and have a warm and hearty meal on the table in about half an hour.
Having the chicken pre- cooked and using store bought broth and pasta really saves a lot of time.This version is my favorite though, I love spinach and this is a really easy way to incorporate it into your diet. Even my kids eat their greens with this recipe, and that's saying a lot! This recipe is enough for a family of four with leftovers for lunch the next day.
You will need
6 cups chicken broth
2 cups of precooked chicken (shredded or cubed)
1 package pre made cheese tortellini ( I like to use the frozen)
1 package frozen mixed peas corn and carrots
3 hand-fulls of baby spinach
salt and pepper to taste
throw it all in a pot on medium low and simmer for about 20 minutes, adding water if necessary.
Its really that simple.
Serve with crusty bread and butter or a salad.
