Spring Quinoa Salad
Whether you're watching your weight, trying to add protein into your diet, or just looking for an alternative to rice and potatoes, quinoa is an excellent addition to your diet. High in fiber, magnesium, lysine, riboflavin, and iron, quinoa can help your digestion, lower cholesterol, and even help with high blood pressure.
Even better, it's yummy.
One of my favorite ways to eat quinoa is in a simple salad with peas, cauliflower and parmesan. Its a great side dish that takes very minimal work, and cooks up quickly. To save even more time you can make the quinoa in advance, and store it in the fridge.
Spring Quinoa Salad
serves four
1 cup quinoa cooked
1 Tbsp Greek yogurt
3 cloves of garlic crushed or diced
1 cup frozen peas
1 cup cauliflower diced
1/4 cup fresh parmesan
Heat the Greek yogurt in a frying pan on medium until its almost liquid, about two minutes. Toss in garlic and saute for about a minute. Add peas and cauliflower and simmer for four minutes or so until tender-crisp. Add in quinoa and parmesan and stir until well combined. saute until heated through and serve with a little more parmesan as a garnish.

I have to admit, even though I see it mentioned everywhere, I've never tried Quinoa. Your dish certainly looks yummy! I may just have to try that some time :)
ReplyDeleteIts definitely something you should try. It doesnt have an overwhelming flavor which makes it easy to add into almost anything, and it has such amazing health benefits!
