I may have mentioned this before, but I have a little obsession with coffee.
As a mom, I don't get a lot of sleep, or a lot of downtime, so I make it a priority to start my morning with a few quiet moments and a hot cup of coffee or two before the kids wake up and chaos reigns again. Of course, I also have a second coffee before lunch, and a frozen coffee mid afternoon, and some mocha scented fro-yo as a treat after dinner.....

Chicken in Phyllo
One evening a few years ago, I was standing in my kitchen trying to figure out what the heck I was going to make for dinner. I had zero inspiration, and none of the ingredients for my usual go-to meals. Upon inspection of my sad cupboard and freezer contents, I found some leftover chicken breast, a package of phyllo pastry, cheese and bacon, and in that moment, this recipe was born.
Considering its humble beginnings, these phyllo "bundles" were a wild success, they have almost a cult following in my family, and my brother in law often invites himself over if hes finds out I'm making them. I cant say I blame him though, they really are delicious.

The first time I tried creme fresh was with a fish taco recipe last summer. I was hooked!
If you've never tried it, you don't know what you're missing. I could never go back to sour cream. Since that first taste, I've been experimenting with different ingredients to add to make creme fresh a regular addition to our table. I've found a lot of great combinations but my my favorites are always the simplest and the one in this recipe is one of the best.

OMG Cheese Stuffed Meatballs
Winter always puts me in the mood for comfort food, and whats more comforting than the classic spaghetti and meatballs? My mom makes the absolute best spaghetti sauce, it's so good. I've been trying and failing to recreate the taste for years, with no luck, so I use store bought( I can hear my Nonna crying as I write this). To make up for my lack in the sauce department, a few years ago I threw myself into perfecting the meatball. I mixed up the spices, the meats, the sizes, I tried buffalo meatballs and Chinese meatballs, I added jalapenos and even tried meatless, before finally, I came to the conclusion that you just cant beat a classic, but you can put a little spin on it.
Broccoli Risotto
Side dishes are the bane of my existence. Most meals I serve come with a salad, not because I love salad ( nobody loves salad) but because of its simplicity. Sometimes though, i want to get a little fancy, and when i do, risotto is my go-to side. Mushrooms. lemon, saffron, beans, you can put anything in it and it turns out great. My favourite though is broccoli risotto, even my three year old loves it.

1/4 c. olive oil,
2 garlic cloves chopped
I large broccoli ("trees only, no stalks") chopped
2 1/3 cup chicken broth,
2 cup milk
1 cups Arborio rice
2 tbsp. butter
1/4 c. grated Parmesan cheese
Combine milk and all but 1/3 chicken broth in a small saucepan, heat on medium low
In a frying pan, heat 2 tablespoons oil. cook the garlic and broccoli until garlic is soft, about 3 minutes. Add remaining chicken broth, and salt and pepper to taste. Simmer, uncovered, just until broccoli is tender, about 10 minutes. Set aside.
Heat the remaining oil in a deep frying pan. Cook onion until tender, about 4 minutes. Add the rice and stir thoroughly. Stir 2/3 cup mikl/broth combo into rice mixture. Cook, stirring constantly, until all of the liquid is absorbed. Add remaining hot broth, 1/3 cup at a time, stirring constantly. Allow the liquid to absorb between additions.
Cook, uncovered, until rice is creamy and grains are tender, then combine broccolli and risotto mixture. Top with parmesan cheese
Total cooking time is about 25-30 minutes.

Soy Mocha Latte
I love coffee, i always have. Its a running joke in my house that I'm slowly trying to replace all the blood in my body with straight up caffeine. I'm usually a simple double double girl, and I'm usually running my coffee maker at least twice a day. Lately though, all the ads and talk about fall inspired fancy coffees has me wanting to break out of my coffee slump comfort zone.
I started with lattes, or at least my simple home made version of them, and i really like them, but then I found this recipe and its like my eyes have been opened!
Soy Mocha Latte
2/3 cup soy milk ( i use unsweetened Silk)
1 short espresso extra strong
1 Tbsp. chocolate syrup
1.tsp sugar
whipped cream (optional)
Heat the soy milk in the microwave until its steaming ( mine took about 1:45, but this microwave isnt exactly top of the line) add espresso, chocolate syrup, sugar and stir well. Top with whipped Cream.
Thats it, it takes less than three minutes and is oh so yummy!

Crispy, Chewy Chocolate Chip Cookies
2 cups all-purpose flour
1/2 teaspoon baking soda
1/2 teaspoon salt
3/4 cup unsalted butter, melted
1 cup packed brown sugar
1/2 cup white sugar
1 tablespoon vanilla extract
1 egg
1 egg yolk
2 cups semisweet chocolate chips
1. Preheat the oven to 325°F (165°C). Grease cookie sheets or line with parchment paper.
2. Sift together the flour, baking soda and salt; set aside. In a medium bowl, cream together the melted butter, brown sugar and white sugar until well blended.
3. Beat in the vanilla, egg, and egg yolk until light and creamy. Mix in the sifted ingredients until just blended.
4. Stir in the chocolate chips by hand using a wooden spoon. Drop cookie dough 1/4 cup at a time (for giant cookies) or a tablespoon at a time (for smaller cookies) onto the prepared cookie sheets. Cookies should be about 3 inches apart.
5. Bake larger cookies for 15 to 17 minutes, or 10 to 12 minutes for smaller ones (check your cookies before they’re done; depending on your scoop size, your baking time will vary) in the preheated oven, or until the edges are lightly toasted. Cool on rack
