Parmesan Crusted Chicken
![]() |
| This is not my picture, mine wasnt nearly as pretty but it made up for its looks with flavour in spades |
I'm going to admit, I was very skeptical about trying this recpie when i first saw it. It looked good on the commercials, but I am not a fna of mayonaise. That being said, my energy levels today demanded simple and I had the ingrdients on hand so I decided why not.
I am so glad that I did. This was easily one of the top five chicken meals that I have ever eaten. My eldest daughter, who hasnt eaten dinner that wasnt pasta in almost ayera, not only cleaned her plate (including mashed potatoes and veggies), but asked for seconds. This is definitely one of my new go-tos.

Parmesan Crusted Chicken
from Hellmans.com
Ingredients
•1/2 cup Hellmann's Mayonnaise
•1/4 cup Parmesan cheese
•4 boneless, skinless chicken breast halves (about 1-1/4 lbs.)
•4 tsp. Italian seasoned dry bread crumbs
Directions
1.Preheat oven to 425°.
2.Combine Hellmann's® or Best Foods® Real Mayonnaise with cheese in medium bowl. Arrange chicken on baking sheet. Evenly top with Mayonnaise mixture, then sprinkle with bread crumbs.
3.Bake 20 minutes or until chicken is thoroughly cooked.
I served it with mashed potatoes and veggies, but for a super simple meal, a fresh salad and some crusty bread would go great as well.
Happy cooking
My Princess Room
I think I'm finally ready to share my Princesses room. Its still not completely finished, but were getting there and I love how its turning out!
The biggest challenge we faced, was that the girls are sharing for the very first time, and we wanted them to each feel like it was their space. In the old house S's room was pink and brown stripes and Vs room was purple and white, we thought that having similar colors here in the new house would make the transition easier so we painted the room half purple and half pink. I then added some birch tree decals from Etsy to fancy it up a bit.
I am so in love with this decal, but a warning for anyone who is considering one, block off an entire afternoon to get that thing up. I thought an hour tops, and spent four hours in the room.
There's still quite a few things missing from the room. I need curtains, a bed skirt and sheets, and a few more wall "thingies", but I love how its coming along!

We kept a few element from the old nursery including their furniture, light fixture, and a few accessories. I added a few things as well though, like the mirror on the dresser ( that will be hung on the wall eventually) that I am so in love with. Its from Jysk.
One piece of furniture we did have to change though was Sophia's bed. This was a CHORE! Both of the cribs turn into double beds, unfortunately neither of the rooms we could have given them have room for two double beds with a decent amount of space between them, and so began the arguing.
Dh was all for bunk beds, and I am not, not even a little bit. We already have issues with the little one jumping off furniture, the last thing I need to give her is a ladder to get some height! I fell in love with a bed from the Disney Princess Series ( how did I not know Disney made furniture?) that cost exactly four million dollars.
Finally after weeks of shopping online and in store we ended up at Ikea, which is where we found this sweet little white iron bed. It was perfect, and now my big little princess has a real bed instead of just a mattress on the floor.
There's still quite a few things missing from the room. I need curtains, a bed skirt and sheets, and a few more wall "thingies", but I love how its coming along!
Can men handle labor?
This video literally made me spit out my Cheerios this morning!

I love how they go in laughing, and how quickly the laughing stops. My only issue is that it only lasted 2 hours, thats amateur! Lets see them take it for 40 hours and then maybe they would have an idea
Toy Rotation
![]() |
| This is last christmas at my moms house, please remember I only have two children |
When we moved though, the girls got a dedicated toy room, I was so excited! Not only did I get to have a dining room table, but the girls would actually be able to play with their toys! I figured since the room was pretty big, i wouldn't need to do a toy rotation. I couldn't have been more wrong. Did I mention they have every toy ever made? You couldn't do anything in that room, and it was impossible to keep clean and organised.
So out came the bins. We are almost done, and it couldn't have made a bigger difference. The girls can now play with their toys, even help to clean them up! There's space on the floor to walk and everything is just much calmer and neater.
It may seem like a big task to start, and it is, but it shouldn't take more than an afternoon and will make a huge difference in quality of playtime and cutting down on clean up time.
What you Need
A babysitter, you do not want your kids watching you put their toys away
Bins, enough to hold 3/4 of your kids stuff
labels and markers
a basement/attic/extra closet/some form of storage space
1. Assemble all the toys from the entire house ( excluding stuffies and books from bed) into one room
2. Identify the toys your kids cant live without, for us that was the easel and art supplies, Princess Barbies and Dress Up Stuff
3. Separate the remaining toys into 4 groups of roughly the same amount each. Make sure that all sets are together ( eg, Barbies and Barbie clothes, Mickey with Minnie etc. ) Try to make sure there's a variety of different toys in each group
4. Pack away three of the four groups of toys and label the boxes 1-3, Put in storage somewhere where they are relatively easily accessible
5. That's it, you're done. Kick back and enjoy a coffee break, you've earned it
I try to bring out new toys every 3-4 weeks, but you can go longer or shorter depending on your kids. I find 3-4 weeks is just long enough that by the time the new toys come out, its like Christmas day for them.

What tricks do you use to keep things organised?
