The Best Fajitas You Will Ever Eat

Whenever I want to really impress my dinner guests, this is the recipe I use.  It takes a little more prep than your usual fajita recipe, but it is so worth it.
The marinade is so flavorful, that you don't really need any toppings, but the fresh Pico De Gallo, and fresh crema really take it over the top.  Just don't plan on having any leftovers.






Pico De Gallo
2 medium tomatoes
1/2 a red onion
2 green peppers
4 sprigs of cilantro
2 cloves of garlic
1 Tbsp fresh lime juice
1/4 tsp cumin
1/4 tsp ground black pepper
a bit of lime zest

Chop everything up, put it in a bowl, cover it up and let it sit for at least an hour







Crema ( bowl on the left)
1/2 cup plain Greek yogurt
1/2 cup mayonnaise
2 Tbsp lime juice
1/2 tsp cayenne
1/2 tsp cumin
1/2 tsp garlic powder

Mix everything up and refrigerate for at least an hour








These fajitas are great using either beef or chicken, but I prefer to use both.  I use about a pound and a half of flank steak and 3 boneless skinless chicken breasts, as well as 3 or 4 chopped peppers and a chopped red onion.

Marinade
1 cup vegetable oil
1/2 cup soy sauce
1/2 cup balsamic vinegar
3 tbsp. Worcestershire sauce
2 tbsp. Dijon mustard

3 cloves minced garlic
1 tbsp. cilantro chopped
juice and zest from 1 lime

Mix it all up and pour it over the meat and peppers.  Let it marinate in the fridge for about an hour.
Once its all ready to cook, remove the meat from the marinade and grill it to your taste ( I love my steak rare, but we usually cook it to medium for the kids).  BBQ the peppers in the marinade in a baking tray. 

To serve just put a little bit of everything, along with some fresh grated cheese onto a wrap and enjoy!

  2. We love fajitas but hadn't thought of cooking them on the bbq, have to try this out as soon as the weather lets us in the garden!!
